I remember rolling cherries with my mom every Christmas. My mom made them with her mom. My kids now roll cherries with me! Not to mention they are yummy! ~Sonya T.
1 stick butter softened
1 Tbs vanilla
1 lb confectioner's sugar
5-6 Tbs evaporated milk
Maraschino cherries (approx 50)
1 -12oz semi-sweet chocolate chips
1/4 strip of paraffin
Drain cherries on plate lined with paper towels and set aside. Put butter that is very soft in mixing bowl, and add milk and sugar. Stir with mixer until all blended together. Add vanilla. Stir mixture until will for into balls without sticking to your fingers. if you have to add more sugar to get this consistency you can. Take 1/2 tsp of mixture and roll into a ball in the palm of your hand and then flatten... then wrap it around a cherry and roll again until cherry is completely covered. Set on plate and set in refrigerator for 30 mins or so while you prepare your chocolate for dipping.
Melt chocolate chips and about 1/4 block strip of paraffin in double boiler. Dip each cherry until covered in chocolate and set on wax paper or alum foil. a tiny pickle fork is great for the dipping. Save extra chocolate at the end and take the fork and do chocolate swirls on each cherry. Let set until hard. Don't refrigerate after dipped or they will sweat when you take them out.
The nice thing about this recipe is you can add more chocolate. If you have lots of cherries, you can add more sugar and make more of the white center... and just add to until you come out even. Just always have more sugar and chocolate chips on hand.
